We are happy to present you a unique, boutique Israeli wine The Cave Old Vines produced from Cabernet Sauvignon. This is a branded, or project wine, where the authors try to do something contrary to the rules. Their result deserves recognition as a resounding success.
Grapes for this wine are harvested in a vineyard planted in the early 1980s in the vicinity of Kerem-Ben-Zimra in Upper Galilee (Northern Israel). Thanks to the area’s terroir, the wine has a decent maturity and minerality.
Many years of professional care have grown the winery Cave Old Vines into a veritable garden of old vines producing harvests that are ideal for this magnificent wine. A striking combination of grape age, the correct harvesting time, carefully controlled technological processes and 24 months of ageing in new French oak barrels in the cellar work together to produce a truly spectacular boutique collection wine.
